Quick fixes lunches for toddlers
« on: October 11, 2006, 13:00:08 pm »
I have just gone back to work and am wondering has anyone any ideas on quick things I can give my 2 year old when we get home? It's usually too late to cook a full dinner and I don't always have something prepped in the fridge. He will eat anything except eggs - which is half the problem!!!!

Some of our favorite quick foods:
- Sandwiches (sometimes I make them ahead and pop them in the fridge)
- Bowl of cereal
- Yogurt
- Cottage cheese
- Cheese and crackers
- Leftovers ;D
- Fruit

Well being a SAHM to two very demanding kids means i dont have time to cook them anything... so what i do is, i make a meal the night before i know can be fridged and reheated the following day, like.... meatloaf, lasagne, spaghetti bolognaise, a roast dinner.... its a lot easier, then the kids get a nice healthy meal but it also means i dont have two very angry babies because ive left them in their highchairs for ages to cook their food :)
Or as a quick fix for lunch i always give them crackers with cream cheese or sliced chedder, and ommlettes (but if he doesnt like eggs i see your problem)

We all had cream crackers and cream cheese for tea yesterday - they were lovely! Thanks to you all for reminding me of how lovely they are!

A quick meal here for us is always cheese on toast (grilled cheese) - they love it! I also do dippy eggs/ omlette, sandwiches, pizza, jacket potatoes done in the microwave with cheese, baked beans with bread or toast, soup with bread or toast, breadsticks and crackers with various dips.

In a hurry I do: soup with a quick quesadilla, baby carrots or small bits of bagged salad with dressing for dipping options, string cheese wrapped with turkey, fruit and cheese, whole wheat bagel and cream cheese with sliced green, red or yellow peppers, or yogurt.   :)
