Cooking with wine
« on: October 14, 2006, 14:49:53 pm »
At what age would you feed your LO's recipes cooked with wine?

I want to make French Onion Soup and the recipe I have calls for wine... Is all the alcohol evaporated or is it concentrated - I can't remember? To be on the safe side I'll just add more stock and pour some wine for DH and I  ;) but what do you think?

I wasn't sure where to post this - it didn't seem right for baby food recipes.

I am told by dh (who works in a restaurant) that the alcohol burns off.

The alcohol does burn off when you are cooking;I have cooked with wine for the little one ever since she has been eating the same food as us ( about 6 months now).

Thanks. I went with the wine after all and it was yummy. Arwen ate all hers (she's a star and will eat anything), Fraser didn't try his but ate the cheesy toast I did with it, even DH ate all his! So that rates as a success and there is plenty for the freezer too.

Sharon,

It was from the Annabel Karmel Family Favourites book, and having just read the "lazy" thread I have to admit I can't be bothered typing it up but here is a link to Delia's version (very similar except for the cognac) :
http://www.deliaonline.com/recipes/french-onion-soup,1308,RC.html

Rather than croutons I toasted some slices of french bread then melted some Gruyere cheese over the top. For Arwen's I just watered down the soup a little, and sprinkled cheese directly on the soup giving her some regular bread that was less crusty. Oh, and I did not have beef stock so I used half home-made chicken & vegetable and half made with low-salt stock cube.
