I was just wondering what you guys would do?  how do you get your sitter to know what to do and all that Jazz?

I would write out a detailed routine for your baby sitter to follow and enure that they understand it and stick to it.

If you are getting a baby sitter it might also be worth while asking them to come round a few days earlier so that they can see the routine in action and know what you mean with regards to watching yoru lo's cues.
