DD LOVES Pasta - want to ring the changes

Our DD Katie (2 years old) overall eats a fairly well balanced diet, although it is a bit restricted in some areas. She goes to nursery 4 mornings a week and eats pretty much everything that is put in front of her (which is great).

One of her all-time favourite foods is pasta, which does mean that we have some very easy-to-make teas / dinners. I am trying to up her vegetable and meat intake at the moment (she loves fruit, but is a little more suspicious of veg and really only likes sausages for meat, but will sometimes try a few bites of other things), so I make a variety of different sauces to go on pasta, the vast majority of which are a hit. She loves pesto as well, so if there is anything I think she might not eat much of, I might hide it in a bit of pesto. (e.g. green pesto, mushed up carrots and soft cheese all mixed together goes down well - probably sounds yucky to everyone else, but she likes it!).

Does anyone have any ideas for quick sauces with lots of nutritional value I could try on pasta? Also, any ideas for alternatives to pasta (I have tried corn / veg pasta and she loves egg noodles too)? Plus, how can I cook, for example, chicken, so it is soft enough to mush up into a pasta sauce? (can you tell that I don't do much cooking?  ;D )

She also eats cooked rice, but she always baulks at potatoes. Sometimes we just make a toasted sandwich for tea. She does seem to like her carbs, but it would be nice to have them a little more balanced with protein / fibre etc...

Any responses will be really appreciated!!

Hi Frances,

Pasta loving toddler here too.  :) 

Do you have a food processor?  I cannot live without mine.  I finely mince carrots, spinach and parsley in my machine and add it to ALL of my sauces.
 
With pesto I use half basil and half kale or greens. 

Have you tried risotto/Italian style rice?  Much more like pasta than rice and you can use any sauce. 

As far as meat goes, you can mince finely in the food processor cooked chicken or turkey pieces and add to your tomato sauce or any type of sauce, it comes out real fine.  I also grind cooked chicken or turkey mince real fine too and add to sauce and it seems to go down well. (pardon the pun!  ;D)

More alternatives to pasta that has similar texture etc...is couscous.  Very high in fibre and iron as well.  I treat it like a pasta and add various sauces.  Also bulgar wheat or pearl barley is great for this too.  We also serve up polenta with tomato sauce although it is a bit more mushy than pasta.

Have you tried making minestrone soup with all the veg as recipe call for, whizz it up in processor and then add the pasta in the broth and serve like that?  I just remembered this one and have not done since winter, so will do this week!  ;)  We also love pasta with beans.  I use borlotti or canellini beans mashed up with pasta.

I have had a bit of success with rice noodles, like a Thai noodle and serve with his favourite veg or my hidden veg/meat ;) with soy sauce.

Aisling - thank you so much for all these ideas! They are great!

I never even thought of trying couscous / pearl barley etc - I definitely will. And thanks for food processing ideas - we just have one of those hand blender thingies, but I could easily make various different soups and things and belnd those up, then freeze and have ready sauce any time we need it - must get more organised, must get more organised.... maybe I should splash out and get a proper food processor?!

Also, minestrone soup - good idea! Katie will eat the stock part of soup, but always avoids the actual chunks in it - blend up, serve on pasta and voila - thank-you!

Sounds so stupid, but it's so easy to get in a rut about these things...

Do you think a LO can eat TOO much pasta? LOL.

;D  LOL!  According to my Mum who is married to an Italian, (AKA my Dad  :P ;D) we used to go to visit our grandparents in Italy every summer as kids and my sister and I lived on pasta and butter with parm cheese for 1 month straight no veg ever yet we survived! 

I know what you mean about the rut and even answering your post has got me to get my rear in gear as well so thanks to you too!  :P :)
