first birthday cake
« on: July 16, 2007, 17:09:52 pm »
My daughter has eczema and we have not introduced dairy, eggs or wheat (she's 11.5 months now).  We plan to start now, one at a time.  We are thinking of dairy last, as my hubbie was allergic when he was a baby.  Does anyone have ideas for a cake I could make, perhaps only using wheat or egg yolks, as I will probably only intro one between now and then?  Or maybe a few bites won't even do much?  Maybe she'll just have sorbet or something...thanks!

You could also try Cherrybrook Kitchen.  They make cake mixes and icing that are dairy free, egg free, gluten free and vegan.
I made a homemade chocolate cake for dd when she turned one.  She reacted, so if I make her cake now, it's with a vegan sponge cake recipe.
It is:
2 C. flour
1 C. sugar
3 tsp baking powder
   as egg substitute:
 1 tsp baking powder
 1 TBS vinegar
 1 TBS water
1/4 C. plus 2 TBS oil
1 1/3 C. water
Mix dry ingredients.  Add egg substitute ingredients and the oil.  Blend until dry ingredients are moistened.  Add water and mix well.  Pour into greased 9" pan.  Bake at 375 degrees for 30 min.

I don't offer icings as my lo is allergic to corn and confectioner's sugar, but the Cherrybrook Kitchen icings are milk and egg free.

Happy Birthday to your LO
