Birthday Coming up... DS has Egg White Allergy...

My DS Ethan will be turning 2 on the 27th, and we would love for him to have a birthday cake, however most bakeries use extra egg whites in their mixes which cause Ethan to have an allergic reaction, since he is allergic to the proteins in the whites.  I thought about baking my own cake since he can tolerate 1 or maybe 2 BAKED eggs, (just not with extra egg whites) but I am really not a baker... does anyone know of a recipe that uses some kind of egg substitute, or does anyone have any ideas what we could use besides a cake?

Don't know of a specific recipe but there is a great site called allrecipes.com and you can search a recipe and tell them what ingredients you don't want.  They are all recipes from people and every recipe is rated on a five star scale and has reviews of people who have tried the recipe.  Good luck and happy birthday in advance!

This eggless chocolate cake recipe has been floating around the boards for a few years. My aunt used to make it too and it's really lovely and chocolaty. 

1-1/2 c. flour
1 c. sugar
1 tsp. baking soda
1/2 tsp. salt
5 T. cocoa
6 T. oil
1 T. vinegar
1 tsp. vanilla
1 c. water

Put all dry ingredients into an 8x8 baking pan. Sift together with fork. Make three wells in mix. one large, one medium, one small. Put the vanilla into the small hole, the vinegar into the medium hole, and the oil into the large hole. Pour the water over the top and mix well with the fork. Bake at 350 for 30 minutes or til toothpick comes out clean.

Thank you Sharon!  I will give this a try for sure, although me baking is a funny sight!  LOl  I'll post and let you know how it turns out!  Keep your fingers crossed!
