making homemade food super smooth

So I've been steaming away my organic fruits and veggies for my son who's 7.5 months old. We've been working on solids for about 6 weeks w/o much luck. He doesn't protest the time in his highchair, but would rather play than eat. I've not pushed it, just offered different foods at different times of the day waiting for his interest to kick in. My husband talked me into trying jarred food and he ate it! It's important to me to make his food and I think part of the hang up has been the texture. Any tips for getting your purees smooth, smooth, smooth? I've been using a hand mixer as advised in my Anna Karmel book, but I don't think that was getting it smooth enough (according to my mother).

Push it through a seive.  Puree (add water during that process) then push it through a seive.

I found that adding a little more liquid made it smoother. I also used a handheld mixer, and you have to mix it for a while to get rid of all the lumps, but it worked for me with adding more liquid. If it still isn't smoth enough for your/his liking, the sieve is good. Especially when pureeing coarser foods or foods with peel etc.
