rice balls?
« on: March 10, 2009, 03:48:26 am »
hmm, planning on makeing chicken stir fry and rice for suppper tommorow..

so Cohen can pretty much handle the stir fry part fine as finger foods (may just cook his veg a little longer)

but the rice doesn't work well as a finger food---and he doesn't want me feeding him..

cam I make some sort of a plain rice ball? dont really want to add extra veg or meat to this since he will have that in the other part of the meal..

any ideas?

hey, yup they were good!

I did the itialian rice ball recipe thats on all recipes.
not sure if this will work

http://allrecipes.com/Recipe/Italian-Rice-Balls/Detail.aspx

cut out most of the spices but would make them again and experiment...just did parm cheese and cooked the rice as it instructs.
also I just baked them on parchment on a cookie tray for 40 min--until they were kind of crunchy.

they held together well enough--when Cohen grabbed one they did break up into chunks which he handles..could possibly roll them smaller next time.

rice balls work well if you make them with asian sticky rice (shortgrain).  a children's staple in korea, the kids always take them on school picnics, mothers love to outdo each other with who makes the best rice balls!  usually they do chop up veggies, tiny bits of scrambled egg, meat, seaweed, etc and mix it in but i dont' see why you couldn't do them with just balls of rice. very yummy!
