Couple of questions about veggies

Ok, so here they are..:)..:

1- Do you peel your carrots, I want to roast mine this time, instead of steaming & not sure whether to peel or not

2- Are potato-containing recipes freezable?..I want to make ds a potato-leek mash & not sure if it's ok to freeze

I do peel my carrots as I can't get them as clean as I like (unless I am using baby carrots, which are actually big carrots peeled, cut and shaped to look like baby carrots).

When you say "mash" do you mean actual mashed potato with butter, milk, etc.? I am not sure how this would thaw after frozen- I don't think it would end up fluffy but should still taste fine. I froze pureed potato veggie cubes for dd and they turned out fine but puree is so different from mashed. I also froze baked potatoes with cheese where you scoop out the potato and mix it with seasoning and cheese and then fill it, and these work out fine when defrosted.

Freezing potatoes is OK. Just don't blend/process them first unless you like potato-flavored rubber! Fork-mashing seems to be OK tho. ;D

:)..thx ladies...I was going to just mash it with a masher & cook it with the leeks in a tbsp of leeks, thought it would be nice, what do you think?:)

Got to run peel some carrots..:)

Made it today with sweet potato, so guess I'll stick with that, as don't want ds eating too many potatoes, not much nutritional value there..:)

Yah, carbs are good to a point, but there are lots of other choices with more nutrition. It's possible that you get a better potato selection where you are, though; here in the States, most potatoes are one of like 3 or 4 different kinds, not lots of variety and not as much nutrition as some of the less common varieties. Sweet potato - used to hate them, learned to LOVE them once I had kids! :) Yummy with a bit of cinnamon, or a bit of curry powder, just a touch, and pureed sweet potato is also good in yogurt instead of fruit! :)

Never though about sweet potato in yogurt before..!...really funny I had never tried it, till a couple of years ago was trying to eat low GI foods & that's when I came across it..!
