well guess i will add the lentil muffins to my weekly baking!

went shopping today for cheese (is a silly trek to the ONE store in this city that sells cheddar ::) ) to make cheese flapjacks and then realised i forgot eggs - so this is what DS and I will be making/eating tomorrow, recipe is from Berni (mum of alice)

150g rolled oats
150g grated cheddar
50g butter (melted)
2 eggs

mix all together and bake for 30-40 min at 180C.


and being that oats are stupidly cheap i am also making sweet ones, too, but recipe is out of reach of (or i am just stuck on my lazy butt right now) so will post tomorrow :)

berni said the recipe also suggested you could reduce the cheese and add some grated carrot or courgette as well...i am going to do with just the cheese at first until i get ds liking them and then will health-them-up.  ;)

sweet flapjacks recipe is here

110g (4 oz) butter
55g (2 oz) soft light brown sugar
3 tbsp runny honey
225g (8 oz) oats

melt butter, pour into bowl. add sugar and honey, stir until dissolved, mix in oats. pour into greased baking pan and bake at 190C for 20-30 minutes.  allow to cool for 5 minutes, then skor into squares with knife. when cold you can break them into squares easily.

and sadly by typing it out i have realised why i have not made them yet, no brown sugar in this country! have heard rumours that the asian food stores often sell it so there is a possibility.  but sadly so much of my baking is impossible without brown sugar :(  anyone got a flapjack recipe that just uses honey? i have found a syrup that may be okay to use instead of golden syrup (going to try anyway) and would love to have peanut butter in them but no brown sugar.......

This is a fantastic thread.  DH has the munchies now from me reading him snippets :)

This may be a really stupid question, but I've never made flapjacks before...what do you bake them in?  Do you put the whole thing in a baking dish?  Flapjacks makes me think of pancakes, but I'm thinking that's not right.

Oat flapjacks like these are really a British thing!  Where I am from (Ontario) anything baked in a pan is called "squares" and squares come in millions of varieties and is just a type of baking not a specific thing, kwim? Is that the same for you ladies?  If so, just think of these as one more type of squares if that makes sense? You mix the ingredients together and spread them into a baking pan like what you might bake brownies or other squares in.  To serve them just cut them into squares or rectangles and eat with your fingers! Usually flapjacks are sweet - made with oats and golden syrup (most similar to corn syrup but with a bit of a different flavour) and then nuts or raisins might be added but these cheese ones are great for LOs to snack on!

Thanks Mashi! I was thinking the cheese ones might even been a good breakfast or lunch?

Trying french toast casserole this morning. We'll see how it goes...

i made some mini pizzas out of the jennie maizels book this morning...they were a huge hit with daisy,and i got all sorts of veg on them!! And they were so easy! ;D

Both my kids and DH have been tucking into the lentil muffins!! :)

MINI PIZZAS

DOUGH                                                           TOPPING
225G(8OZ) PLAIN FLOUR                                    BASE SPREAD SUCH AS TOM PUREE,PESTO.OLIVE PASTE,
0.5 TSP SALT                                                   OR PASSATA.
0.5 TSP FAST ACTION DRIED YEAST                    THEN SOME KIND OF CHEESE I USED CHEDDAR OR MOZZARELA THEN ANY VEG,
120 ML/4 FL OZ WARM WATER                            MEATS
1.5 TBSP OLIVE OIL

PREHEAT OVEN 220/425/GAS MARK 7
SIFT IN FLOUR AND SALT INTO A BOWL,AND STIR IN YEAST.MAKE A WELL IN THE CENTRE AND GRADUALLY WORK IN WATER AND OIL TO MAKE A DOUGH.
KNEAD THE DOUGH FOR BOUT 5 MINS UNTILL SMOOTH AND ELASTIC
PLACE IN AN OILED BOIL AND TURN THE DOUGH ONCE TO COAT IT WITH OIL,COVER WITH CLING FILM AND PUT IN A WARM PLACE TO RISE (I LEAVE MINE OVERNIGHT)

ONCE RISEN KNEAD AGAIN FOR A FEW MINS,ROLL OUT DOUGH TO A THICKNESS OF 1CM AND CUT INTO CIRCLES OF THE SIZE YOU WANT.LOAD TOPPING.bAKE PIZZAS ON GREASED TRAY FOR 7-15 MINS DEPENDING ON THE SIZE.(I DO SMALL FAIRY CAKE SIZE).
I FREEZE THE CUT OUT DOUGH AND TAKE OUT 2 WHEN NEEDED.THEN I JUST STICK CHEESE ETC ON AND POP IN THE OVEN FOR 7 MINS JUST B4 LUNCH!

Thanks Lucy! Maybe I'll try tomorrow for lunch. Do you guys think grated or thinly sliced zucchini would work best? Maybe both grated carrot and zucchini with the cheese on top of that?

Thanks guys! I wimped out today and bought store-bought whole wheat mini pizza crusts (two 8 inch crusts) and since Marisa doesn't have school tomorrow or Thursday (Jewish holiday) she and I will make her and Matthew pizzas for lunch with grated carrot and zucchini! Am thinking a bit of olive oil on the crusts, then the sauce, then veggies and last cheese.

I also might make the cheese flapjacks tonight and try at breakfast tomorrow? I assume I can keep them in the fridge and reheat one square as wanted? And then maybe I'll try the lentil muffins soon too.

BTW, I made these muffins last week (I did them in mini muffin trays for snacks) and they came out GOOD. Only change I made was to use half AP flour/half whole wheat and I did sneak some dk choc chips into a few of them for DH and I! http://www.grist.org/article/recipes1#muffins

I would not keep them in the fridge or re-heat them - just keep them on the counter (covered) and eat as is.  :)
