Fiiling/substantial snacks???
« on: May 14, 2010, 13:29:48 pm »
i cannot fill this girl!!!

since getting over Gastro all Daisy wants to do is eat.She is constantly asking for food! she eats a good breakfast at 7.30 but from 9.30 till lunchtime she is asking for food and telling me she is hungry! i give her an organix fruit bar she eats it and 20 mins later she comes back with 'im hungry mum' so i give her some fruit she eats it and the cycle continues. From 11am she is asking for her dinner and doesnt stop moaning till she gets it.She then eats a huge bowl of dinner, pudding and fruit, has a nap and then the food saga starts again till teatime, after 2 snacks in the afternoon she is screaming for her dinner by 4pm!!

i have tried distracting in case it was just an attention thing going on but it doesnt work.i really do think she is genuinely hungry cos she eats what i give her.
she usually snacks on fruits(which she loves),rice cakes, crackers, breadsticks but i dont think ATM they are filling her enough.

Any suggestions or ideas that your lo's have for snacks?

We go through this when DS is in a growth spurt!  I find fruit does not really fill him up very much, unless it is banana, which fills him up well!  I also give him cereal with milk or toast with jam/pb for a morning snack (he will have one for bkfst and the other for morning snack).  Bagel bites (like bagels turned into crackers, almost like a crisp bread or ryvita?) with cream cheese, pretzels (the thick baked bready kind not the crispy kind) with a dip or spread (cream cheese, peanut butter, pesto), oatmeal biscuits (i can get savoury ones here not just sweet...i guess sort of like oat cakes in the UK?).

I often will cut up slices of ham or mortadella and cheese and put it in a little pot for him to carry around the house as well, it fills him up and he likes to share it with his toys ::) Yogurt is a favourite, of course, but he needs to choose to have it in the day or for his pudding after tea, otherwise he'd eat it all day long.  I also give him veggies (prefers tinned peas, carrots or corn) or a few spoonfuls of baked beans for a snack if he's really hungry!

Well, first of all I'm glad she's feeling better!!!!!  I'm thinking 2 things here, protein and fiber...!!  Will she eat a roll-up made of turkey and cheese?  (roll the slices up like a cigar!).    Or dry cereal as a snack, Kashi makes one called 'Mighty Bites" that is very hearty.  I agree with Mashi with regards to the fruit...the only time I feel like fruit satisfies dd is when there is a mixed bowl of it, I do blueberries, strawberries, canteloupe and honeydew mixed in a little bowl and that does fill her tummy!

If you bake, there are so many muffins and breads that are hearty and wholesome....I have the BEST recipe for banana muffins if you want it...it is SO simple!  I always have some kind of muffin in the freezer for an easy and healthy snack!

Stan is always ravenous when he comes home from nursery. Bananas, porridge, peanut butter on toast, hummus and pita bread, oatcakes (I do Stan 2 at a time stuck together with butter and/or honey), a little bowl of baked beans, custard. I've got a recipe for lentil muffins which sounds gross but they are pretty good - they are not my favourite but Stan loves them and they are very filling and full of vegetable protein - and they freeze so you can have a batch in the freezer (I put 2 per freezer bag) and defrost them in the microwave

When DD gets like this I often fill up one of her snack cups that are less likely to make a mess and spill with cheerios or crackers and let her carry it around as it is less annoying than her coming over every five minutes asking for food. Once she's done going through the food spurt I don't have to do that anymore.

Anne I would like the muffin recipe also.

And, a shameless plug for more of you foodies to join us in the meal planning thread, there are plenty of recipes over there and lots of places to share your own, too! Jess has just posted a recipe she has created herself for Whole wheat cheddar chive muffins that sound really good....I am hoping to make them next week for snacks and lunch for DS!

This is the recipe I use (as you can tell it is American)
3/4 cup cooked lentils (tinned is fine but wash and drain well)
1 cup sugar (I use half brown and half white)
1 tsp cinnamon
1/2 tsp bicarb. soda
1/8 tsp baking powder
3/4 cup plain flour
1 tsp vanilla extract
2 eggs
1/2 cup oil
1/2 cup raisins
1/2 cup chopped walnuts

The secret with these muffins is don't do too much mixing. Mix until the ingredients are combined but then stop!

Preheat oven to 180

Put lentils in a mixing bowl and mash them a bit (use a fork or I use my immersion blender. They don't have to be a puree but just broken down a bit). Roughly stir in eggs, oil, sugar and vanilla.

Add flour, bicarb, baking powder, salt and cinnamon, mix until just combined. Fold in raisins and walnuts.

Dollop into muffin tins (I use fairy cake liners - or grease the tins) and bake for 20-25 minutes.

Lucy, glad that D is feeling better and has an appetite! That is great news!  I second the protein and fiber!!! Things like a tortilla spread with humus and filled with turkey or ham or chicken then rolled and cut into little pinwheels?  Bagels and peanut butter, H likes rice cakes spread with avocado.

Anna, those muffins sound interesting but I'd love to try them!  You say preheat the oven to 180? I'm assuming that's 180C (which is about 350F).

Marisa loves turkey roll-ups too! Other filling/healthy snacks are Babybel cheese, nuts (if she eats them yet), PB on toast (if she has) or in oatmeal and smoothies!

Banana Muffins!

 1 egg
 1 tsp vanilla
 3 very ripe bananas
1 cup sugar (you can cut this back if you want to 3/4)
 1 tsp baking powder
 1 tsp baking soda
 1/2 tsp salt
2 cups Whole Wheat flour ( we use King Arthur Organic)
 2 tsp cinnamon

optional: 1 or 2 tsp wheat germ (pulverize it into powder by putting in a baggie and hitting with a can of soup)

 Heat oven to 350
Beat egg.  Add oil and vanilla .  Then add bananas one at a time and mix well.
Add sugar, salt, baking soda, baking powder and cinnamon. Mix well.
Add flour a bit at a time and mix.

Add batter to lined cupcake pan (fill 2/3 full) and bake for 20 minutes.  check for doneness by inserting toothpick in center of muffin, if toothpick isn't gummy with wet batter, then you're ok!

 Makes about 12 muffins.

*the wheat germ adds a little extra protein, but if you have none on hand, it doesn't effect the outcome of the muffins at all.
*dh likes me to add some mini-chocolate chips to his...
* I have made these with only 2 bananas and they come out just fine.

These are so simple, so yummy, very wholesome and make your house smell amazing!!   We keep about 4 or 5 out, then the rest I wrap individually and pop them in the freezer.  I can then just toss one in my bag frozen on my way out the door and we have a snack for the road!  Take one out of the freezer before bed, and in the morn we warm it up, put a little butter on it, serve with yogurt for a great breakfast!

 Enjoy them!
