Until very recently, nothing! She would wolf them down plain (I make pancakes with fruit in them, so plenty of natural sweetness and flavour). In the past couple of weeks, she has cottoned on to the fact that the honey DH has is rather tasty...so now has a small dollop of honey to dip in.

Soft cheese (Philadelphia) and sometimes I mix a tiny bit of chocolate spread in with the cheese.
Ds1 also likes maple syrup or honey.
I also mix fruit in the batter so it has natural sweetness and both boys will eat them plain, especially if out and about. I also put vanilla and cinnamon in the batter for extra flavour.

Nothing on our pancakes.
Like Nuala and Ali I add fruit to the batter and sometimes cinnamon, almond or vanilla.
A lovely one is a couple of banana whizzed into the batter and then another couple of bananas sliced and stirred in so that each small pancake has a soft cooked banana slice in the middle. Yum! I also do this with slices of pineapple.  Recently I added a big dollop of peanut butter (unsweetened) to the batter along with the bananas.  That was nice too.  Just a lot cleaner for out and about snacks not having a dip or sauce although occasionally at home we have a few drops of lemon or lime juice.

Honey or a little maple syrup on the side to dip it in. I also make sweet potato pancakes to freeze for the kids..both eat them plain and they have no sugar in the batter.

DS actually prefers them plain for some reason. I love maple syrup but you just can't get good stuff here - I need to move to the states :)

Do you have Morrison's Kelly? I get my maple syrup there and it is delish. I can't remember the name but it has a Canadian flag all over the glass bottle with a small round handle. Maybe I am not as fussy as you but it tastes great to me. It's expensive though about £5 a bottle.

I have been making some delicious pancakes by soaking  some oats in a flavoured yogurt overnight then adding 2 eggs and frying. Great if LO is wheat intollerant too.
