Egg for lunch - every day?

I really struggle with lunch ideas beyond 'an egg' and 'a sandwich'. Is there any problem with her eating an (organic, free range) egg every day (or nearly every day) for lunch? She usually has a prune and some other fruit, some leftover veggies if we have any. She's not that keen on toast or sandwiches, she just eats the spread/filling and leaves the bread.

I don't think it is straightforward with eggs! They do have a certain amount of cholesterol though how that effects a toddler I am not sure ???

I guess you have tried a variety of foods for her? Olly can't eat eggs or sandwiches so his lunches tend to be pasta, rice or potato based.

Ethan loves eggs so I used to try and do egg every other day.  I remember when I was younger they recommended no more than 3 eggs a week but think that's changed now and an egg a day isn't too much of an issue?  Not sure what age that's for though.  On the other days he generally has peanut butter and honey sandwiches  ::)

Pretty sure I have heard of recent studies which show that although they are high in cholesterol they don't actually have any effect (or negligible anyhow) on cholesterol in the blood stream. Again I don't know how that would affect a toddler but I would be more than happy to give my kids an egg every day.

Oh she'll eat pretty much anything, but if there's a decent amount of leftovers in the fridge it's usually earmarked for all of our tea so I just run out of ideas because I'm not into cooking something big.

We're currently in a fish fingers for lunch almost every day phase here  ::)

Other things that sometimes work are: Hummus & breadsticks (or toasted pitta bread strips) / chicken or ham pieces & rice crackers / fishcakes / plus any veg or fruit that can be persuaded into him.

I don't think 1 egg per day will do her any harm  ;D

Agree with PPs- there are worse things that she could insist on eating every day other than an egg.  And, at least an egg gives you so many options on how to prepare it- scrambled, fried on toast, hard boiled etc etc.

My now 2 YO used to be really into eggs about a year ago, now she will hardly touch them.  I wish I could get her back to wanting to eat them every day :)

My DS eats an egg almost everyday for breakfast, along with some type of carb and variety of fruit. I obviously think its fine  ;D ;D

Eggs are fine each day... one egg is a serving until the age of 2 so I would just limit other sources of egg.  Would she fancy french toast (I think you call it eggy bread over there??)

Actually, dietary cholesterol is vital for proper brain and nerve growth and function, even more so when kids are smaller and these systems are still growing and maturing. (Ditto saturated fats, BTW, with the glaring exception of trans-fats :)) Obviously wouldn't suggest a half-dozen a day, but I wouldn't worry about cholesterol being an issue with an egg a day for a toddler. :)

we are egg obsessed here to. My LO will really only eat toast, eggy bread, scrambled egg or jam on toast for lunch or supper (depending on home or nursery day)!!

I feed mine eggs probably 3 days a week also...he loves them. I make pots of veggy soup as well and he has some soup every day with lunch. That way I don't worry so much about what other solids he eats. Usually gluten free crackers with egg salad or homous or tuna salad, salmon salad....
I freeze my soups in ice cube trays and use 5 per lunch. Mine is also really into beans, so I throw different kinds into the soup and a few on the plate.

Hamish has an omlette every day with my mum, usually one also on saturday and sometimes sunday!! So he misses one day a week!!
