I have no idea how to properly fill up his A time without over stimulating him! I'm aiming for a minimum of 2 hours.
Right now, he eats and then plays in his bouncer with a toy for 15-20 minutes while I pump, then he rolls around on the floor for 10-15 minutes, then in his exersaucer for 10-15 minutes. The rest of the time I just wing it, read books, look at pictures, walk around the house etc. but I don't feel like I'm doing the best job for filling his A time. I'm also afraid that I'm over stimulating him and thus the reason we're having sleep issues.

Yeh that's pretty much it! I'd add in a nice walk in the stroller to a cafe and watch mum enjoy a coffee. Srsly though, time outside is great it is just the right level of stimulating.

My son tends to fall asleep during stroller rides, am I doing them too close to his nap time then? Should I take him out as soon as he's done eating?

Yeh I'd give that a try. And keep it short!
