I'm having lots of luck at the moment with risottos...
I take a bunch of veggies (at the moment I'm using a mix of peppers, zucchini, carrot and green beans), chop them in the food processor, freeze in ice cube trays and then throw the mix into anything and everything.
Lunch today was brown rice with 4 cubes of veggie mix cooked in, bit of left over chicken cut small and added, then a bit of cream and grated cheese to make it all good and sticky - dd has to be able to get some of it in herself else she gets mad! Then some apples chunked up and stewed with cinnamon and cloves for 5 mins.
Dinner most days is some sort of soup, probably veggie noodles soup today.
Breakfast is our problem. today she had 200ml milk on waking then about 3 spoons of cereal (dry is prefered
) and a bite of banana. I should probably ditch the milk, but she normally only wants to eat dry bread...
