Ha ha Happy - is that because you left him no other food whilst you were off giving birth? ;)

(my DP tends to eat most of the muffins I make too - which is why I cut down how often I make any!)

I'm sure there must be a joke here about a muffin in the oven but I wouldn't be able to work out how to put it together...

Happy DS and I made some great cakes today, out of white beans and eggs, they are gluten free high protein (a can of beans and 5 eggs made 12 muffins) and YUMMY!  I made them once before in mini muffin cases and they were so tiny they were sort of not worth eating (and hard to get out of the paper) but I used the regular muffin tin today and achieved a sort of cup cake size.  They do have honey or syrup in them though, don't know if you'd be interested?

1 cup white beans (canned)
5 eggs
1 tbl sp vanilla extract
1/2 tsp sea salt
4 tbls sp butter/coconut oil
1/2 cup honey (I used syrup as my honey had crystalised!)
1 tsp baking powder
1/2 tsp baking soda
6 tbls sp cocoa powder (this is optional in the original recipe.  last time I made these I used ground almonds which was nice)

rinse and drain beans, dry on kitchen paper
Whizz beans, 3 eggs, vanilla and salt to liquify

mix cocoa baking soda and baking powder (or omit cocoa)

Beat butter/coconut oil and honey until fluffy, add 1 egg beat, add 1 egg, beat

pour bean batter into butter/egg mixture, beat until smooth
stir in dry baking soda/powder/cocoa mixture, beat until smooth
pour into cup cake tins almost to the top (they don't rise much I used a muffin tray and they came out cup cake size)

bake 160 c for 25 - 30 mins

DP and I found them too salty, next time I'll put in half the salt although I don't know what that will do to the mix.

Yeah you might have to wait a while!  I did find this took longer to make than a bunch of basic sugar free fruit/veg muffins which are so easy to throw together, but perhaps it's just my poor baking skills slowing me down  :D
