We did a lot of steamed cut up broccoli...I'd just make up a batch and freeze it. You could also steam peas and do the same, just be sure to give them a little squish with a fork before giving them to DS to minimize the risk of choking. I had a hard time finding fresh peas when Tyler was in this phase, so I used frozen and just microwaved what I needed. You can also steam and cut up green beans or peeled asparagus, but these can be tough to chew, so you might wait until your DS is really good at finger foods. Some folks have had luck giving cooked chopped spinach as a finger food, but Tyler always had a hard time picking it up.
You can also take just about any green food, steam it, mash it, and combine it with mashed potato or mashed sweet potato. Roll them into balls and you've got finger food! You can play around with the mixture to get it how you wanted...Tyler usually liked a stiffer consistency, so I'd stir in some crushed cheerios or dry baby cereal before I rolled it into balls. You can freeze these too.
