Recipe needed for egg-free birthday cake!!

Hi All
It's my baby's first birthday soon and his best friend is allergic to eggs - really wanted to make a cake that everyone could eat - anyone got any good recipes?

thanks for starting this!  i've been looking, as ds is allergic to eggs & his birthday is coming up soon too.

i've found these recipes so far, but haven't tried any of them yet.  am starting to wonder if it will just be easier to do an ice cream cake!   :P

No Egg Wonder Cake
INGREDIENTS:
·   1 3/4 cup sifted cake flour
·   1 cup sugar
·   1/4 cup cocoa
·   1 teaspoon baking soda
·   1/2 teaspoon salt
·   1/3 cup shortening
·   1 1/2 teaspoons vanilla extract
·   1 tablespoon vinegar
·   1 cup cold water
PREPARATION:
Sift dry ingredients together into a mixing bowl. Add remaining ingredients and beat until almost smooth. Pour into a greased and floured 9-inch square baking pan. Bake at 350° for about 30 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Frost cake or serve with whipped topping.

Applesauce Spice Cake
Ingredients:
1/2 cup molasses
1 cup applesauce
1 tsp cinnamon
1/2 tsp cloves
1 tsp baking powder
1/2 tsp baking soda
1-3/4 cup flour (whole wheat pastry flour is good)
2 tsp ginger (optional)
Preparation:
Combine the molasses and applesauce in a large bowl. Combine remaining ingredients and stir into the liquid. (If the batter seems very dry, add a little more applesauce or a little water.) Bake in a nonstick 8 x 8-inch baking pan or one sprayed with a non-stick spray, in a 350° F (175°C) oven, for 30 to 45 minutes, or until it tests done.
The optional ginger makes an acceptable gingerbread. You can also leave out the ginger and add 3 or 4 tablespoons of cocoa to make a tasty but not very sweet or rich chocolate cake.

Chocolate Cake Without Eggs
Ingredients:
1 1/2  c  Sugar
1/2  c  Lard, shortening or butter
2 1/2  c  Flour
2  ts  Baking soda
1  t  Vanilla
1  c  Cocoa
1  c  Sour milk
1  t  Salt
1/2  c  Boiling water
Directions:
Melt shortening and dissolve cocoa in it. Then mix in sugar. Add sour milk into which the soda has been stirred. Add flour and salt in gradually. Add vanilla and boiling water last.


Plain Eggless Cake

INGREDIENTS
·   2 1/2 cups all-purpose flour
·   2 teaspoons baking powder
·   1 teaspoon baking soda
·   1 (14 ounce) can sweetened condensed milk
·   1 cup orange juice
·   2 teaspoons vanilla extract
·   1 cup melted butter
DIRECTIONS
1.   Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
2.   Sift together the flour, baking powder and baking soda into a large bowl. In a large bowl, mix together the flour, baking powder, baking soda. Make a well in the center and pour in the sweetened condensed milk, orange juice, vanilla and melted butter. Mix well and pour into prepared pan.
3.   Bake in the preheated oven for 30 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
