We do omelettes a lot for breakie. Nathan and I share one with 2-3 eggs, depending on what else I am serving with it (toast, fruit, etc). He can easily eat one egg by himself. Basically to make it I scramble the eats a bit in a mug while the pan heats, put in a bit of oil or butter and coat the pan well, then put the egg in. I let it cook, tilting the pan once in a while to spread the uncooked egg around. When it is almost cooked I carefully flip it, then put any filling in and close it up. I always use some kind of cheese, so once it is melted it is ready. I put in cooked onions, zuchinni, and/or bell peppers, or some kind of finely chopped meat, or peas... anything, really. He loves it, especially if he can dip it in something.
Here is Nathan's meals for today:
B: white toast with almond butter and cherry jam, and a banana
S: a yellow plum and some of my rice pudding
L: tortellini tossed with fresh parmesian cheese and cooked carrots, zuchinni, celery, and red pepper
D: cherry tomatoes from our garden, about 1/4 of a kaiser roll with butter, and half of a chicken breast... all dipped in Greek salad dressing (olive oil, olives, oregano, and feta cheese)
